These stained glass biscuits are fun to make and look very clever. Oh and they are delicious with a cuppa.
What you'll need:
300g packed of boiled lollies
200g Butter, room temp
1/3 Cup caster sugar
1/3 Cup golden syrup
2 Cups flour
1 tsp Vanilla bean paste (This is delicious! but you could also use Vanilla essence.)
What to do:
Pre heat oven to 180degrees.
Seperate lollies into colours. Place each colour into a zip lock bag and finely crush with a rolling pin.
With the beaters, beat butter, sugar, vanilla bean paste and goldren syrup until light and creamy. Fold in flour with a spoon until dough comes together.
Knead the dough on a lightly floured surface until smooth. Divide into two, wrap with cling wrap and refrigerate for 30 minutes.
Roll one half of the dough out onto a floured surface until about 4mm thick. Using cookie cutters cut shapes out, making sure they are large enough to remove a circle or shape from the middle for the 'stained glass'. Use a straw to make a hole at the top if you would like to put ribbon through your biscuits. (As pictured)
Place onto lined trays and bake for 4-5 minutes, spread crushed lollies into the centre of biscuits then bake for another 4-5 minutes, or until biscuits are golden and lollies have melted.
Set aside to cool and repeat with second portion.
I also cook the middles, these are the perfect size for a toddler treat (or Mummy treat)
