Rainbow cake


With the twins birthday just around the corner, I have been researching cakes this morning, so I thought I would share my recipe of one of my favourite party cakes with you.


This fun cake is a bit fiddly but makes a huge impact when the beautiful white cake is cut and the colours of the rainbow are revealed. Kids (and big kids) will love it!! Enjoy!


  • Ingredients:
  • 1 1/4 cup cornflour
  • 1 1/4 cup plain flour
  • 1 1/4 cup self-raising flour
  • 1/2 tsp salt
  • 8 eggs, at room temperature
  • 1 1/4 cup caster sugar
  • Food Colouring

Method:
Grease 5 x 20cm round cake tins and line bases with baking paper. Sift flours and salt together three times to aerate.


Preheat oven to 180C. Using an electric mixer, beat eggs and sugar in a large bowl on medium-high speed for 6 minutes, or until mixture is thick, pale and tripled in volume.

Gradually sift flour mixture over egg mixture while simultaneously folding in with a large metal spoon until just combined. Divide mixture into 5 bowls and add a different colour dye to each mixture.

Divide mixtures into the 5 cake tins. To level batter, gently spin tins on kitchen counter. Bake for 5-10 minutes or until cakes have shrunk away from the sides slightly and spring back when gently touched.

Turn out on to baking paper-lined wire racks. Carefully peel away baking paper, then leave to cool.

On a cake plate place one of the cooled cakes and top with some buttered icing (recipe below), repeat with the remaining cake layers until all are complete. 


Cover the out side of the cake with the rest of the white butter icing.

Place in the fridge for two hours so the cakes sets and makes a nice clean cut.


Butter icing:
  • 500g butter, cubed, at room temperature
  • 6 cups pure icing sugar, sifted
  • 1/2 cup milk

Place the butter in a large mixing bowl. Use an electric beater to beat for 2 minutes or until very light and fluffy.

Gradually add the icing sugar and beat until the mixture is very pale and fluffy.

Gradually add the milk and beat until smooth and well combined
