Ice Pops


I love storing the flavours of summer in yummy ice pops for the kids (OK maybe for Tommy and I to), there are so many yummy flavours you can create lime, watermelon, blackberry, cantaloupe, grapefruit, orange or yoghurt and berries. 
The one that disappears fastest at our place is strawberry. So I thought I would share:

You will need:
4 cups of strawberries, hulled and chopped up
3/4 Cup Sugar (I use raw sugar)
1/2 Cup Water
2 Tbs Fresh Lemon Juice

What to do:
Put sugar and strawberries in bowl and let sit until the strawberries start to let some of their yummy juices out, (about 20-30mins) 
Put strawberry mixture and water into a saucepan over medium heat simmer for about 5 minutes or until softened.
Cool to room temputure.
Place in food processor and blend away, leaving it a bit chunky if you like.
Place into moulds and freeze for about 5 hours, but best over night. 

This makes about 16 ice pops in conventional moulds, if you want less just half the recipe.
