Herb and Walnut Cheese Log

I love this delicious cheese log, serve with some delicious crispy bread, whenever I take it places it is the first to get cleaned up and it doesn't last long in the fridge at our place either.
I thought I had better share, because surly sharing will up my chances of someone actually making it for me one day!
Enjoy.


What you'll need:
150g White castello cheese
125g Cream cheese
2 Tbs Port, sherry or brandy
1 tsp Dried chilli flakes
1/2 Cup mixed herbs (I use parsley, chives and basil), Finely chopped 
1/3 Cup toasted walnuts, Chopped
Crisp Bread or Melba toast to serve

What to do:
In a food processor place cheeses, alcohol, a little pepper and salt and mix until smooth. 

Mix chilli and herbs together, sprinkle on a rolled out piece (30cm) cling wrap, leaving 2cm around the edge. 

Spoon cheese along one end of the herbs, roll the cheese into the rest of the herbs making a log and covering all the cheese. Twisting the ends of the wrap to seal.

Place in fridge for 2 - 3 hours.
