With all the extra beets in the garden I looked for some interesting recipes to help me use them all up. These brownies (more red in colour than brown) were delicious and I will be making them again come school lunch box time. Enjoy!
What you'll need:
500g raw beetroot (about 3-4 medium beets)
100g butter
200g milk chocolate
1tsp vanilla extract
250g caster sugar
3 eggs
100g plain flour
25g cocoa powder
What to do:
Peel the beetroot and chop and place in a large bowl, add a splash of water and microwave for 12 minutes (or boil until tender)
Place oven on 160 degrees Celsius.
Chop chocolate, and butter into cubes, place into the bowl of a food processor along with the drained beets and vanilla, wizz until smooth. (this will melt the butter and chocolate.)
Place eggs and sugar in a bowl and beat until thick, pale and foamy (about 2mins)
Gently fold in the beetroot mixture with a spatula then fold in the sifted plain flour and cocoa powder.
Pour into a lined slice or baking tray and place in oven for 25 minutes or until risen and has a very slight quiver in the centre and a nice crust.
