This tart is fantastic because you can change the fruit to what ever is in season. Blueberries, Strawberries, Pears or Apricots are all delicious.
It can be served hot with cream or ice cream (or both!) for a dessert, or a slice cold in a lunch box would go down well also.

What you will need:
125g butter
1 Cup caster sugar
1 tsp vanilla extract
2 eggs
1 1/2 Cups self raising flour
Fruit to cover the top (I used 3 Nectarines)
What to do:
Pre-heat the oven to 160 deg (325 Deg Fahrenheit).
Grease a 9inch tart pan, or spring form tin.
Beat butter, sugar and vanilla together until light and creamy, add eggs and beat well.
Fold in flour with a spatula.
Top with fruit of choice.
Bake for 1 hour or until skewer comes out clean.
Top with icing sugar.
