This jug full of watermelon goodness is the essence of summer for me.
With it's sweet minty flavour, refreshing thirst-quenching quality and beautiful blushing colour, this cocktail is almost perfect. I say almost because it's far to easy to drink, but hey, it is the holiday season and if you can't enjoy a drink or two now then when can you?

What you'll need:
1/4 Cup Water
1/4 Cup Sugar
8 Cups Diced Seedless Watermelon
1/4 Cup Fresh Lime Juice
1 3/4 Cups Blueberries
3/4 Cup Fresh Mint Leaves
1 1/4 Cups Tequila
Ice
Mint to serve
What to do:
In a small saucepan, bring water and sugar to simmer over moderate heat until sugar is dissolved (about a minute). Leave to cool.
In a blender puree watermelon until smooth. Pour through a strainer, discarding the pulp.
In a large jug add sugar water, lime, blueberries and mint leaves, using a wooden spoon lightly muddle the blueberries and mint.
Add the watermelon and tequila. Refrigerate for 2 hours.
Pour into a jug full of ice and garnish with mint.
