Bread Rolls

I try and cook something with Poppy in the weekend that we can pop in her lunch box for school. This way come lunch time at school she is excited to eat her lunch, I know all the ingredients in her lunch boxes and it makes school more appealing (always helpful.)
This weekend we made bread rolls, Some silly shapes like a lizard, man, snail and bird made an appearance but also a few small rolls. Some made it to the lunch box, and a few were eaten hot with butter and cheese. Yum!

What you will need:
1 Cup warm milk
1 Tbs dried yeast
2 tsp caster sugar

3 Cups plain flour
1/2 Tbs Salt
40g Butter

What to do:
In a jug combine milk, dried yeast and sugar, set aside for 5 minutes or until frothy.

Meanwhile in a large bowl place flour, salt and butter, rub with tips of fingers until mixture resembles bread crumbs.

Add milk mixture to flour and combine until a dough is formed.

Knead on a lightly floured surface for 10-15 minutes.

Place dough in a lightly oiled bowl and set aside in a warm, draught free place (I use the sink with a little hot water in the bottom and cover with a tea towel) for 1 hour.

Pre-heat oven to 200 degrees Celsius. Punch centre of dough down and knead on a lightly floured surface for 2 minutes or until smooth.

Roll into balls, or whatever shape you want your rolls to be, place on a lightly floured baking tray and leave for 10 minutes to rise again.

Top rolls with a brush of milk or water and your favourite sprinkles (we used, dried fruit and Poppy seeds).

Bake for 5 minutes then reduce heat to 180 degrees Celsius and bake for another 15-20 minutes or until rolls are golden and sound hollow when tapped.
