Recently I was given some beautiful quinces, and turned them into some delicious quince paste.
It's a yummy treat to have on a cheese, fruit and nut platter or even as a delicious side to a grilled chicken breast.

What you will need:
1.5 kilos Quinces (Peeled, cored and diced)
1/2 Cup water
700g White sugar
What to do:
In a large saucepan add quinces and water, simmer over a medium heat for 30 minutes or until quinces are tender.
Place quince mixture in a food processor and process until smooth.
Add quince mixture and sugar back into the sauce pan and simmer gently for 3 - 3.5 hours or until mixture is ruby red, thick and leaves the sides of the pan.
Place into six 1/2 cup capacity ramekins or moulds that have been lined with cling wrap.
Set in fridge over night.
Enjoy with fabulous wine and cheese.
