Roasted Chickpeas

These are great on the table on a Saturday afternoon when you have friends around for drinks or if I take out the chilli my little ones devour them in seconds. 

You can make up your own favourite spice mix to use as a coating but here is my favourite.

What you'll need:
2 cans of chickpeas, rinsed and drained (about 3 cups)
2 Tbs olive oil
1 tsp ground cumin
1 tsp chilli powder
1/2 tsp cayenne pepper
1/2 tsp sea salt

What to do:
Pre-heat oven to 200 degrees Celsius. 

Place all ingredients in a bowl and gently toss until chick peas are evenly coasted with the olive oil and spice mix.

Spread evenly on a lined baking tray, and place on the middle tray of the oven for about 30 - 40 minutes or until crisp.

Enjoy!

  3. Hi Holli welcome back to The Kitchen Series over on the blog today. Good golly these look great. I'm going to give them a go and prepare them for date night on thursday night. Ads and I are going to attempt to watch a movie without the kids in our arms lol. Last night I cuddled Miss Three with fever while breastfeeding Tully it was rather pretzel like. hehehe. try the lemon delicious pudding if you get time the little ones will love it it causes arguments about who gets seconds in our household, at 9 months Tully is proving to be very loud if we don't feed him quick enough.
