Apple Tea Cake

This easy tea cake is lovely and moist, and perfect for lunch boxes, or morning tea on a rainy day.

What you'll need:

80g butter

1/2 cup caster sugar

1 egg

1 tsp vanilla essence

1 cup self-raising flour

1 tsp ground cinnamon

1/2 cup milk

2 small apples, thinly sliced (I used red skinned but any would be fine)

20g melted butter

1 tbs sugar

What to do:

Pre-heat oven to 180 degrees Celsius. Grease and line your cake tin (20cm round).

Using beaters to beat butter and caster sugar until light and creamy add egg and vanilla and beat until combined.

Sift flour and cinnamon over butter mixture, add milk and fold in with a spatula until just combined. Spread cake batter into tin and smooth on top.

Arrange apple sliced on top of cake batter and bake for 35-40 minutes or until golden brown and firm to touch.

Brush warm cake with melted butter and sprinkle with sugar.
