Cake Stall - Choc Chip Cookies

The twins have been sick this week, croup, chest infection, ear infections oh and a touch of asthma. A lot of sleep deprivation, a trip to the hospital and lots of help from their beautiful grannies and we are still trying to get through the day to day.

On the list this week was baking for a cake stall at Poppy's school, I had planned to make beautifully decorated sugar cookies, some cakes and a bunch of cup cakes but that idea went out the window when the little ones got ill.

Luckily I had this tasty and easy chocolate chip cookie recipe, and all the ingredients in the pantry. Don't forget when baking for a school sale to label your goodies and make a little sticker up with the ingredients, also I like to mix up the sizes and amount of cookies in each bag.


What you'll need:
150g softened butter
1/2 cup caster sugar
1/2 cup brown sugar
1tsp vanilla extract
1 egg
1 3/4 cups plain flour
1/2 dark chocolate bits
1/2 cup milk chocolate bits


What to do:
Pre-heat oven to 160 degrees celcius and line two baking trays with baking paper.

In a large bowl, beat butter, sugars and vanilla until combined and smooth. Beat in egg.

Fold in plain flour and chocolate chips.

Spoon tablespoonfuls of mixture into balls and place on lined trays, pressing down lightly.

 Bake for 15 minutes or until light golden and cooked.

Cool on a wire rack.

Can be stored in an airtight container for up to one week.
